Whisht founder Ryan Cardwell has always enjoyed sandwiches, but his obsession reached new levels during the UK's national lockdown. Not a day went by when he wasn't thinking about what fillings to put between two slices of bread.
Born in a small village in County Down, but unable to return home, he became fixated on finding ways to bring a little taste of Ireland to London. Soon after, Whisht sandwiches was born and quickly grew from being sold on his doorstep in Herne Hill to joining Pop Brixton in April 2021.
Having worked in the restaurant industry for years, at the likes of Dinner by Heston Blumenthal, Ryan's knowledge of flavour is second to none. As a result, you can expect a constantly changing rotation of epic bread dishes from the Emerald Isle, from sumptuous filled sodas, to open-top Colcannon slim.
